There are 3 big, obvious and logical data center of interest in europe, Amsterdam (AMS-IX you link), London (check out LINX) and Frankfurt (see DE-CIX) because they also are big Internet transit points. It's beneficial to everyone, they are pretty central. The difference between "AMSIX hosted" and "DE-CIX hosted" for you would be like 5-10 ms delay, tbh.
And just to nitpick, AMS-IX, as well as other "IX", do not "host" servers and services. They are traffic exchange points, no more. It appears many hosters put there machines nearby, ofc.
