You're forgetting something: all those games you've mentioned have typical multiplayer, they're not MMOs.
7.1 is easy in lobbied games where people can play a match for about an hour with or against up to five other players in an RTS, or maybe sixty-three others spread between two teams... but PS2 will have thousands of players at once and it's possible that the better sound quality will cause latency issues for the player, since the throughput requires a portion of their connection.
