Boone is right, Dude in the vid is running TN panels. Though to be fair you wont be seeing them from this viewpoint, you will be closer to perpendicular to each panel face.
Sub 24" eIPS monitors with 5-6ms refresh rates aren't all that expensive compared to TN panels, though you have to get 3. (full IPS larger panels would be a different story cost wise) The main cost is the video card(s) needed to get good quality/FPS at that resolution.
However the nice part about this is, next cycles video cards will run current games even better, so later on in the PS2 lifespan these costs will continue to drop to where more people can run multi-monitor setups with less relative horsepower compared to today.
The vid is not the best example of these setups, but not bad.
If PS2 confirms multi-monitor gaming (dont know why they would leave that feature out since most modern games are supporting it), ill drop some good $ on it.

At the moment crossfire allows for more than triple monitor gaming (nvidia currently limited to 3x monitors for gaming, and 1 monitor for not gaming) and since you asked and its quite badass, ill refer everyone to check out this setup for a good example of whats possible right now. (no this isnt me)
